Food Trends for 2015

Posted by Monte Johnson

The lists of food trends for the new year have been rollling in for well over a month now, and there is no shortage of opinions, both expected and unexpected. You could probably see a lot of them coming, too. Who wouldn't have predicted the demise of kale? It's on every Denver menu, from fine dining to fast food, because of it's healthful qualities and red-hot popularity. And what's more popular than kale right now? Gluten-free menu items, of course. Hamburger buns, desserts, and noodles are all available in gluten-free renditions and now seem to be taking over entire menus. There will always be dining guests with Celiac's disease to accomodate, and yet those who choose to avoid gluten out of preference rather than necessity are losing interest and are exploring other options. According to the "What's Hot" list by Nations Restaurant News, gluten-free dining has slipped from 5th place in 2014 to 12th place in 2015.

Here is a list of some of up and coming 2015 trends, perhaps a little surprising but not unexpected:

1. Locally sourced meats and seafood
2. Locally grown produce
3. Environmental sustainability
4. Healthful kids’ meals
5. Natural ingredients/minimally processed food
Here is the complete list that includes a thorough representation of "what's hot, what's not." And while we embrace these "fads," they are commonplace in many kitchens and will not fall off of the list anytime soon. We are also excited to see that many of the entries in this entire list are already featured on our Taco Mojo menus:
Another list, featured in the Whiteman List, includes a few more up and coming surprises for 2015, coming soon to a grocery store or restaurant near you:
  1. Hummus without borders
  2. Seawood beyond sushi
  3. Beer cocktails
  4. Oysters
  5. Vegetable-flavored yogurt
