Fresh Mango Mojo - The Taco Mojo Way

Taco Mojo Gourmet Mexican Catering launched in October 2009, with mango mojo as the cornerstone of a unique approach to a taco bar. By pureeing fresh mango, lime juice, orange juice, garlic, vinegar, chile, and seasonings, we arrived at the perfect combination of sweet and fiery. Just last year, a "big burrito conglomerate" whose R&D chef follows us on Facebook, launched their own version of mango mojo, filling the airwaves and billboards with the virtues of their new discovery of sweet and fiery. As the saying goes, Imitation is the sincerest form of flattery. 

What is mojo? In Mexico, Cuba, and the Spanish Caribbean, it is a spicy-hot garlic sauce made with oranges that you can splash on everything. Our mojo is made with fresh mangoes as the main ingredient and is featured at every buffet we serve. 

While we are certain that their mango mojo arrives in a box, or bottle, or bag, pre-made in some mystery kitchen, location unknown, Taco Mojo's admittedly comes in a box, too. But that is what the mangoes arrive in, and that is is close as it will ever get to a box. In fact, after carefully crafting this elixir right here in our kitchen, the mango mojo ultimately goes into a bottle. Usually it is a re-purposed tequila or triple sec bottle, the perfect vessel for serving a condiment intended for tacos. And as long as demand for mango mojo continues to climb, we will continue to "re-purpose" tequila bottles.
