It's National Taco Day, er...Week!

Today, October 4th, 2017, is National Taco Day. We're all in with this holiday and by coincidence, it feels more like National Taco Week here at Taco Mojo. With corporate event caterings and Taco Mojo weddingsthrough Sunday, we will be grilling 125 lbs. of grilled citrus chicken, 125 lbs. of steak adobo, and 200 lbs. of fresh-grilled vegetables, not to mention massive amounts of pineapple salsa, roasted green chile salsa, fire-roasted tomato salsa, mango mojo, and more. Hats off to Silvino, our chef, for making it all come together

Taco Cart Catering for Cinco de Mayo

 JUST BEFORE THE RAIN

Our friends, Susan and Lance, made it in the nick of time this weekend as their Cinco de Mayo party in Centennial allowed guests to mingle in the driveway and experience Taco Mojo's new taco cart catering option. Guests enjoyed grilled citrus chicken, steak adobo, and a wide variety of salsas, as well as a couple of new mojo sauces, including a roasted strawberry mojo, red chile-peanut mojo, and the tried-and-true mango mojo. By positioning the cart to back up to the open garage, we took on a little rain with minimal disturbance.The tacos must go on.

Beer Fumble or Tequila Touchdown? Do Calories Really Matter on Super Sunday?

ANOTHER SUPER BOWL STATISTIC:

As we predicted, the staggering Super Bowl statistics are out there (here, here, and here), and you can see what estimated consumption looks like for the second largest calorie intake day (behind Thanksgiving) of the year. Especially noteworthy is the number for beer consumption: 325 million gallons of beer. Men's Fitness does the math for us, and says that equates to over a gallon (!) of beer for every man, woman, and child in the United States that has an estimated population of 316 million. Of course, we're skeptical. But even cutting that number in half brings that number to half of a gallon per person, a whopping 550 calories of light beer. If your New Year's resolution to lose weight is still intact by Monday, you have beaten the odds in several categories.

But let's face it. The Super Bowl, like Thanksgiving, only comes around once a year.

It's Coming...

 

In a matter of days, the inevitable deluge of avocado statistics will begin as we rapidly approach Superbowl XLIX on February 1st. The tonnage of avocados consumed in the US is the most predictable (and staggering) number to be thrown around, and yet it is still quite surprising considering the fact that it is a direct result of the marketing efforts of Avocados From Mexico and the Haas Avocado Board just since 2002. And the staggering number: 120 million pounds of avocados will be consumed during the week of the Super Bowl, which is quite a bump from the 8 million pounds of avocados consumed during the week of the 2002 Super Bowl

Mexican Taco Bar-Inspired Beers (# 2)

WHAT TO DRINK   

The ink was barely dry on my last "Mexican Taco Bar-Inspired Beers" blogpost when I stumbled across yet another Mexican chocolate stout beer. This time, it comes from Copper Kettle Brewing Company from Denver. Clearly, there is an emerging pattern that goes beyond the local and national explosion in craft brewing. Brewmasters are creating interesting and unusual flavor profiles in order to complete in a Darwinian "survival of the fittest." One can't help but be reminded of the frozen yogurt wars that have been waged over that last five years, leaving many of the fro-yo-go shops dead in their tracks. In the quest for sustainability in a crowded market, brewers are channeling their inner selves into innovative flavors and packaging in hopes of being the next Fat Tire.

Mexican Taco Bar-Inspired Beers

WHAT TO DRINK

Stocking the bar for a taco bar party at first might seem to be a rather easy task, especially when it comes to Mexican beers. Raise our hand if you immediately think of Corona with a lime in it! Yeah, me too. Not that I like Corona, it's just that they have branded their product well, which is why it is one of the five best-selling beers in the world. In fact, I'm willing to bet that Corona and pre-mixed Cuervo margaritas are the first "guests" invited to most parties where Mexican tacos will be served. Fortunately, today's brewmasters are creating a new breed of beers that pair perfectly with the flavors, spices, and, yes, chiles, that we often associate with Mexican food.

Blood Orange Mojito

When it comes to weddings, "something borrowed" is perfectly appropriate. In search of new ideas for signature cocktails that fit perfectly with the Taco Mojo vibe, I came across a simple recipe for blood orange mojitos that look as great as they taste. It turns out that the author of the blog was the photographer/journalist and culinary student at the time, and was competing in a San Pellegrino cocktail recipe contest. Here is a link to the blog. It's definitely worth a look, as the photographs are striking, vivid, and definitely enticing.

Mas Malbec

When our clients ask us for bar options for their Taco Mojo event, Mexican beers, margaritas, mojitos, and sangria immediately come to mind. But what to serve for wine? Keeping with the Latin theme, the guys at Mondo Vino often recommend Malbec from Argentina to fit in perfectly with a Taco Mojo bar. Duey Kratzer at Mondo Vino recently pointed me to Route 40 Mendoza Malbec 2011, a balanced dark purple wine with subtle flavors of dark cherry and plum. Named after the 200 mile highway in Argentina of the same name, Route 40's smooth taste makes it a crowd favorite and an easy pick as one of the most drinkable Malbecs I've tried in a while. When we recommend wines for a party, we want it to be smooth, enjoyable, and a approachable for everyone. It should be a wine that works before, during, and after dinner.

Hibiscus Margarita

It's amazing how the once hard-to-find foods are now readily available in today's grocery store shelves and produce departments. I remember searching high and low for coconut milk, and now you can find four different types of coconut milk, not to mention the half a dozen different flavors of coconut water sold in the beverage aisle. Dried hibiscus flowers aren't quite there yet, but it won't be long. It's more likely that you will find flowering hibiscus trees for sale right outside the grocery store during the months of May, June, and July. But we've got you covered.
